Extra Easy Rhubarb Strawberry Crumble

I call this the Extra Easy Rhubarb Strawberry Crumble because it is a variation on the Easy Rhubarb Crumble I found on Rhubarb-Central.com but I’m just that lazy that I had to make it even easier! 🙂 (It’s the anti-foodie in me!)

Extra Easy Rhubarb Strawberry Crumble

Fruit Filling

  • 2 cups Rhubarb (Chopped)
  • 1 cup Strawberries (Chopped)
  • 1/3 cup Granulated sugar
  • 1 tbsp Cinnamon

Crumble Topping

  • 1 cup Flour
  • 1/4 tsp Salt
  • 1 cup Oats
  • 1 cup Brown sugar (packed)
  • 1/2 cup Butter
  1. In a casserole dish, mix the chopped rhubarb and strawberries, and spread evenly.

  2. Evenly top with granulated sugar and cinnamon

  3. In a separate bowl mix together the crumble top mixture: flour, salt, oats and brown sugar

  4. Melt butter and add to the crumble mixture a bit at a time, continuing to mix between each bit is added. Once all of the butter is added, mix until evenly crumbly.

  5. Spoon crumbly mixture evenly over the top of the fruit/sugar/cinnamon mixture.

  6. Bake at 350 for about 30-40 minutes until the top it is golden brown to your liking!



This was delicious but a little sweet for me so I might cut back on the granulated sugar and up the cinnamon next time!
