Meatloaf Muffins

When I was experimenting with the paleo diet a few years ago I was in desperate need for fast, filling, easy breakfast options – that weren’t egg-centric (as I really don’t enjoy eggs). 

Meat Muffins is what I came up with and I loved them! Especially since I could make these muffins in big batches, portion them out in lunch baggies and freeze them. Anything that allows for batch cooking and meal planning will always come out on top in my books!

However, I almost wasn’t going to post this, since these days I eat almost no meat and I’m planning on eating even less. But, when I mentioned I was putting up a new website and there would be recipes on it again, two people asked if this recipe would be included, so here it is! All I ask then is just, if you can, please be picky about where you get your meat when you are shopping for this recipe as this recipe works best with non-factory farmed, ethical, sustainable and compassionately sourced meats and eggs. 😉

Paleo Friendly Meatloaf Muffins


Bacon, Apple, Cinnamon Pork Meatloaf Muffins

  • 2 pieces Cooked bacon (Chopped)
  • 1/2 Granny Smith apple (Finely chopped)
  • 1/2 cup No sugar added apple sauce
  • 1 tbsp Cinnamon
  • 1 lb Lean ground pork
  • 1 large Egg
  • 1/2 package Meatloaf seasoning
  • 1/4 large White onion (Finely chopped)
  • 1/4 cup Almond meal

Bacon, Cranberry, Walnut Turkey Meatloaf Muffins

  • 2 pieces Cooked bacon (Chopped)
  • 2 tbsp Cranberry sauce
  • 1/3 cup Dried cranberries (Chopped)
  • 1/4 cup Raisins
  • 1/4 cup Walnuts (Chopped)
  • 1 lb Lean ground turkey
  • 1 large Egg
  • 1/2 package Meatloaf seasoning
  • 1/4 large White onion (Finely chopped)
  • 1/4 cup Almond meal
  1. Preheat oven to 400 degrees patting it down to a firm fill just below the top of the cup.

  2. Hand-mix all ingredients (mix each recipe separately though!) in a large bowl until mixed thoroughly.

  3. Coat muffin tins cups with cooking oil (spray or wipe in).

  4. Bake until a thermometer inserted in the centre registers 160 degrees for ground pork or 165 for ground turkey, roughly 40 minutes.

  5. Serve the Bacon, Apple, Cinnamon Pork with apple sauce and the Bacon, Cranberry, Walnut Turkey ones with full berry cranberry sauce.
